"La industria de la alimentación europea ha demostrado ser resistente, incluso en tiempos de recesión económica"
Jesús Serafín Pérez preside desde 2009 FoodDrinkEurope, la organización que representa a la industria de la alimentación y bebidas europea, el mayor sector industrial de la Unión Europea. El sector cuenta con 286.000 empresas que emplean de forma directa a 4,2 millones de personas, con un volumen de negocio más de 1.000 billones de euros y una balanza comercial de 23 billones de euros. Serafín Pérez nos habla de las fortalezas del sector ante la crisis, de cómo afectará el veto de Rusia a las importaciones a la balanza comercial sector y de las oportunidades y los retos de futuro.
- ¿Cuál es la dimensión de la industria de alimentación y bebidas europea?
La industria de alimentos y bebidas es el mayor sector manufacturero de la UE, con una facturación de más de 1.000 billones de euros, así como el principal empleador con 4,2 millones de empleados. También es la primera industria manufacturera en términos de facturación. La industria de alimentos y bebidas es, por lo tanto, un actor económico muy importante.
- En 2014 se incrementaron los principales parámetros económicos del sector. ¿Se está avanzando en positivo?
Aún no disponemos de las cifras para el conjunto de 2014. Los indicadores para el primer y el segundo trimestre muestran una tendencia positiva en términos de producción y empleo, incluso teniendo en cuenta que las tasas de crecimiento siguen siendo bajas. La tendencia es positiva desde 2012, cuando se produjo un incremento del 3,1% en términos de volumen y un aumento en el empleo de 0,4% en comparación con 2011. Nuestra industria, por lo tanto, se ha mantenido bastante estable y ha demostrado ser resistente, incluso en tiempos de recesión económica.
-La industria europea de alimentación y bebidas es diversa. ¿Cuáles son los principales sectores?
La industria de alimentos y bebidas de la UE es muy variada, tanto en términos de tamaño de las empresas como en cuanto a tipología de productos que fabrica. Por ejemplo, en FoodDrinkEurope, reunimos a 25 sectores distintos a nivel europeo. Los 5 sectores top en la industria (panadería y productos farináceos, sector cárnico, lácteos, bebidas y la categoría de 'varios productos alimenticios') representan el 75% de la facturación total, y más de las cuatro quintas partes del número total de empleados y empresas.
- ¿Cuál ha sido la evolución de las importaciones y exportaciones en 2014?
Mirando 2012, nuestra industria consiguió un superávit comercial récord de 23 billones de euros. Las exportaciones de alimentos y bebidas de la UE aumentaron un 13,2% en comparación con 2011, mientras que las importaciones se mantuvieron casi sin cambios. En los últimos 10 años, la balanza comercial para el sector de alimentos y bebidas nunca ha sido tan altamente positiva como ahora.
Nuestras exportaciones han aumentado particularmente hacia China, Australia, Arabia Saudita y Japón, donde el aumento ha sido de alrededor del 16%, con excepción de China, donde alcanzó el 30%. En cuanto a las importaciones, la UE trata principalmente con Brasil, Argentina, EEUU y Suiza, con China, Tailandia, Indonesia y Turquía.
Sin embargo, en 2014 habrá claramente una diferencia en comparación a años anteriores, debido a la prohibición rusa de importar alimentos procedentes de países que habían apoyado a Ucrania. Rusia era el segundo mayor mercado de exportación para nuestros productos, sólo detrás de Estados Unidos. La prohibición ha obligado a nuestros productores a tratar de encontrar nuevos mercados, dejando algunos de ellos en una situación muy difícil.
- ¿Cuáles son las principales oportunidades de crecimiento futuro de la industria?
Tendremos que alimentar a 9 billones de personas en 2050. Esto es un reto y una oportunidad. La demanda de suministro de alimentos aumentará en un 70% hasta 2050. En paralelo, tenemos que satisfacer la demanda de agua, que aumentará en un 40% para el año 2030, igual que la demanda de transporte y energía.
- ¿Qué demandan los fabricantes a la industria de tecnología y maquinaria alimentaria para avanzar en innovación?
Necesitamos una tecnología mejorada para el análisis de los alimentos, la fabricación, el almacenamiento de la información; también nos gustarían sinopsis de marketing concisas y críticas sobre los avances en investigación alimentaria. Esto incluye el procesamiento de materia prima para ingeniería de alimentos, los nuevos métodos de procesado "suave", la automatización, el control de calidad y seguridad, los retos de seguridad microbiológica, los avances en tecnologías de envasado y preservación y análisis sensorial.
- ¿Cómo puede el sector tecnoalimentario ayudar a la industria alimentaria a satisfacer las demandas del consumidor?
Los consumidores piden alimentos de alta calidad sensorial a precios razonables. El conocimiento de los consumidores y la comprensión de las nuevas tecnologías es esencial para su aceptación. Por lo tanto, tenemos que explicar los beneficios a los consumidores en lugar de los beneficios a la industria. Por último, debemos asegurarnos de que nuestro objetivo es siempre para la óptima sostenibilidad y eficiencia óptima (económica, tecnológica y ecológica).
-La industria europea de alimentación y bebidas presenta un nivel de inversión en I+D inferior a otras zonas. ¿Qué está haciendo FoodDrinkEurope para promover la investigación y la innovación?
La medida en que las empresas invierten en nuevos productos depende de varios factores, pero el marco regulatorio y las oportunidades competitivas son extremadamente importantes en estas decisiones de negocio.
Es cierto que la UE tiene niveles más bajos de inversión en I+D que Japón (el más alto) o los Estados Unidos (el segundo más alto). Al mismo tiempo, hemos sido capaces de sostener nuestro nivel de I+D en los últimos años, que ya es positivo. Y también se tiene que puntualizar que los países del norte de Europa tienen un mayor nivel de inversión que los del sur.
