Alimentos de base natural: nuevo reto para la industria alimentaria
Galletas elaboradas con antioxidantes naturales procedentes de la uva, edulcorantes naturales con extractos de frutas o chocolates fabricados a partir de gránulos de frutas y aromas naturales. Estos son solo algunos ejemplos de las más recientes innovaciones para la industria alimentaria que fueron presentados en la jornada "Nuevas aplicaciones de ingredientes naturales en la industria: hedonismo y salud", organizada por el centro tecnológico Ainia en Barcelona.
En la sesión se evidenció que los fabricantes de ingredientes están innovando para conseguir alimentos con base natural. "La investigación en la industria de la alimentación y bebidas va cada vez más de la mano de las empresas de ingredientes. Son un vector muy importante porque sirven a los fabricantes de alimentos y bebidas para innovar a más velocidad", afirma Beatriz Pérez, técnica del Departamento de Nuevos Productos de Ainia.
En los últimos años, la demanda de alimentos que contribuyen a prevenir o controlar enfermedades ha supuesto una oportunidad para la industria alimentaria con el desarrollo de los productos funcionales. Sin embargo, ahora los consumidores, cada día más concienciados por la relación entre dieta y salud, piden a la industria alimentaria productos que además de aportar beneficios para la salud tengan una composición lo más natural posible. "La salud hace unos años era entendida como la incorporación de alimentos funcionales en la dieta y, en cambio, ahora se busca que los ingredientes que los componen tengan una base natural", sostiene Pérez.
Innovación en ingredientes naturales
"Hay dos líneas de innovación: por un lado, eliminar los números E de las etiquetas con ingredientes naturales y, por otro lado, añadir ingrediente naturales de una forma visible, como pueden ser semillas en un pan", expone Nuria Nieto, Product Manager Baking & Dairy de Brenntag. Esta multinacional ofrece una amplia gama de ingredientes naturales para obtener un producto final más natural o artesanal. Destaca su línea de semillas (de sésamo, girasol, linaza, amapola…) y de copos de todos los cereales (avena, cebada, trigo, etc.). También comercializa extracto de malta destinado a conseguir una fermentación natural en el proceso de fabricación de pan y ofrece una gama de aromas y colorantes naturales: "Ahora se está trabajando para mejorar la estabilidad de los mismos, con altas temperaturas en los procesos de fabricación", destaca Nieto.
Otras compañías como Naturex ofrecen compuestos naturales como extracto de romero para la industria cárnica y la pastelería; espumantes y estabilizadores naturales como la quillaia -originaria de Chile-; e incluso presentan un método de curado natural para la carne a base de extracto de apio y acelga. Algunas empresas están investigando el beneficio de estos componentes naturales, como es el caso del Grupo Matamorra que, en colaboración con Ainia, ha desarrollado un proyecto consistente en validar científicamente el potencial antioxidante de los polifenoles de uva para incluirlos en alimentos.
Los funcionales, en auge
Bajo el paraguas de salud y bienestar la demanda de productos funcionales es la que más se expande. De hecho, el mercado global de alimentos funcionales espera crecer un 15% en 2015, llegando a un volumen de ventas de más de 230 billones de dólares. Según datos del Grupo Mintel, en España el 81% de los mayores de 55 años han comprado algún producto funcional en el último medio año. "Las alegaciones nutricionales en productos alimentarios que más están creciendo en España son las que tienen que ver con alimentos funcionales, en primer lugar, y el desarrollo del nivel cerebral, en segundo plano", afirma Flor Mansilla, Trends & Innovation Consultant del Grupo Mintel.
Si bien su crecimiento está asegurado, hay algo que está cambiando en el negocio de los alimentos funcionales. "Los europeos buscan productos naturales que les ayuden a controlar las grasas, la salud ósea, los problemas digestivos, la vitamina D….Pero los productos que tendrán más éxito en el futuro serán aquellos cuyos beneficios para su salud se reconozcan en los mismos ingredientes y no se necesiten pruebas científicas para demostrarlos", sostiene Mansilla.
En este sentido, el nuevo reclamo de los consumidores que quieren mejorar su ingesta nutricional en términos de salud y rendimiento son los productos funcionales con proteínas. "Antes se incorporaban sobre todo en productos cárnicos y lácteos, pero ahora las proteínas se encuentran también en las bebidas y la panadería", señala Mansilla. Además, junto a la fibra, las proteínas son consideradas como aliadas para controlar el peso. "Los consumidores relacionan la ingesta de proteínas con la regulación del apetito. En Estados Unidos, el 38% de los consumidores declara que la proteína les ayuda a realizar menos tentempiés y eliminar los snacks con más aportación de grasas", concluye la responsable del Grupo Mintel.
Productos "sin" para todos
Junto con los alimentos funcionales, otro eje importante de innovación en el que está inmersa la industria alimentaria son los productos llamados free-from concept (sin gluten, sin lactosa...). Los estudios de mercado de Mintel señalan que el mercado de este segmento en España pasará del 10 al 15% en 2015. "Cada vez más marcas están entrando en este mercado, también las de distribución. Se está alejando la idea que son productos caros y esto puede hacer ganar adeptos", afirma Mansilla, Trends & Innovation Consultant del Grupo Mintel.
La penetración de los productos sin gluten es la que más se está afianzando. Según datos de Mintel, en Italia el año pasado este mercado creció un 13% y en España el 6% de la población asegura que está siguiendo una dieta sin gluten. La base de población que los consume se está ampliando hacia la población que no tiene ninguna alergia alimentaria. De hecho, en Estados Unidos, el 72% de los consumidores de productos sin gluten son sanos y no presentan problemas de alergias alimentarias, pero los consumen igual.
Además, existen nuevas oportunidades en el mercado los productos sin gluten. El segmento de alimentos infantiles es uno de ellos: el 10% de los alimentos para el target infantil incluyen etiquetas sin gluten. Además, estos productos están entrando en otras categorías como la bollería o el snacking.
